Overview
QuarkXPress 4.1x introduced a new feature in how the program outputs composite color information -- the option to select 'Composite CMYK' or 'Composite RGB.' This change has caused some confusion, as it is subtly different from how several previous versions of the program handled outputting color information. Here is a full description of each method:
NOTE: EPS files are not affected by any options selected in any version of QuarkXPress described below. EPS files are encapsulated, self-contained, and QuarkXPress cannot modify their contents.
QuarkXPress 3.32
In QuarkXPress 3.32, RGB data in non-EPS images and QuarkXPress objects are sent to the printer without any modification to the color information. When printing separations, this results in the RGB data printing to the black plate. Correcting this situation requires opening RGB pictures in an image editing application like Photoshop and resaving them in the CMYK model. QuarkXPress elements defined with RGB colors have to be set to print process separated using the Edit Colors dialog.
QuarkXPress 4.0x
When QuarkXPress 4.0 through 4.04 detects RGB information, the program automatically converts all RGB color data to CMYK when printing separations. This is true for all non-EPS images and all QuarkXPress elements. This may cause problems for those who print to an RGB device such as a film recorder.
QuarkXPress 4.0x with the "Print RGB" XTension Loaded
With the Print RGB XTension loaded, QuarkXPress 4.0x deactivates the process of converting RGB images to CMYK. It does not, however, affect QuarkXPress elements defined with RGB colors. These are process separated by default just as would occur without the XTension loaded. This allows the PostScript code generated by QuarkXPress to possibly include  data from both color spaces.
QuarkXPress 4.1
In version 4.1, routines are included in the print engine (the part of the application that generates PostScript) allowing you to print either within an RGB color space or a CMYK color space. The control for this setting is located in the Print dialog > Output tab > Print Colors popup.
The options in this popup menu are Black & White, Grayscale, Composite CMYK and Composite RGB. Selecting 'Composite CMYK' automatically converts all non-EPS RGB images and QuarkXPress elements to the CMYK model; it leaves CMYK images and elements alone. Selecting 'Composite RGB' automatically converts all non-EPS CMYK images and QuarkXPress elements to the RGB model; it leaves RGB images and elements alone.
Note that this is not the same as using the Print RGB XTension with 4.0x, as the PostScript is composed of only a single color space data. With QuarkXPress 4.1x, it is not possible to work in a mixed-mode workflow (using both CMYK and RGB images) without one or the other of them being converted to the other colorspace.
Obviously, anytime there is automatic conversion, there is the possibility of unexpected or undesirable results. To minimize these, you should stick with a single color model in any given document for the most predictable results.

To help QuarkXPress perform the conversion more accurately, you must employ the Quark CMS XTension, and configure it with the proper device profiles.
